eggless cookiesh

saturday baking : say hi to em cookies!

after two days of complete macaron disaster, i was totally bogged down in thinking about all the possible flaws that might have caused the tragic batches of macarons. seriously... okay, let's not talk about les fickle macarons here shall we. let's move on to a lighter, happier topic such as...

chocolate chip cookies!!

eggless!! hehe. i thought of baking something, just to cheer myself up... and to pick up those little shattered pieces of my self-esteem... you know, trying to save whatever was left from the macaron disaster. so i thought i ought to make the eggless chocolate chip cookies -  i found the recipes about several months ago.

so why eggless?

aawhhh you knooowwww, since a lot of innocent egg whites have been cruelly sacrificed in the disaster... i ought to make something eggless in return.

i used this recipe, with a bit of tweaking to make the cookies. it's a very easy, simple recipe!

as the recipe calls for using chocolate chips (it's a chocolate chip cookie recipe, remember), i used cadbury melts since i didn't have any chocolate chips in my stash. so, that's how the dough looked when i mixed them into it. because these are going to melt, make sure that when you spoon the dough onto the cookie sheet, the chocolates are not gonna be at the bottom. that is so that when the cookies are baked, you won't get them stucked onto the cookie sheet or have dirty smudges of chocolates everywhere.

they look pretty ugly, which is totally fine by me. in fact, i think that's what makes homemade cookies cute. they have that homey appeal to them. hahaha. anyways, since it was my first batch and i didn't know better, i  lined huge chunks of the dough onto the tray, expecting them to spread out and be ultra big cookies, like the ones from subway. but NO. they didn't (which was possibly because i'd mistaken baking soda for baking powder??). and since they were in such huge chunks, the centre remained a bit uncooked (T____T)

so, i made sure that all the other cookies were very thin... i used two spoons to line the dough onto the tray. i really prefer the cookies to be in freestyle shape. mostly because i'm ultra lazy, and also, as i've said before, that's the homey appeal to these homemade cookies. teeheee :')

see. it's pretty ugly. just the way i like it to be. heheee. and oh yes. because i used chocolate melts, i get these huge, gigantic globs of chocolatey goodness in the cookies. if you eat the cookies freshly baked, you get this gooeyy melty chocolate oozing out of the cookies... imagine that! heheee. if you use melts, just make sure to distribute these melts evenly among the cookies okayh! :D

Eggless Chocolate Chip Cookies recipe adapted from recipe4living.

  • 3/4 cup brown sugar
  • 100g butter (softened)
  • 1/3 cup oil
  • 3 tbsp water
  • 2 tsp imitation vanilla
  • 2 1/4 cup plain flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1-1 1/2 cup chocolate chips (up to you really)
how to
  • preheat oven to 175 C
  • stir together 1st five ingredients. mix well.
  • add the rest of the ingredients into mixture. mix to form dough.
  • spoon onto lined tray. don't really have to space them out too much.
  • bake 20-30 minutes or until brown along the edges.

*try to make the cookies as thin as possible. it's not really much of a problem if you don't though. 
*you can bake them for longer (till cookies are brownish all over) if you prefer crispier cookies with that slightly burnt taste. 

these cookies are very easy to make and you don't need eggs for them. hehehee. make lots and lots of these and store them in your favourite jars. they make good company especially with a glass of warm milk :)
