the choco cake


so a few days ago, i decided to make a chocolate cake... with chocolate fresh cream frosting, a layer of strawberry jam sandwiched between the two layers of chocolate cake, and cookies n cream around the sides of the cake. well, i imagined it to somehow be the younger sister to the ultra yummy double chocolate strawberry (or whatever the name is) of the cheesecake house. well... it didn't really turn out that way though... the flavour palette didn't really match, although the cake i made tasted just fine. it was yummy, in fact. 

so... it prolly was a distant relative to the super yummy double chocolate strawberry cake, i suppose. haha.

although the cake was yummy, i wasn't very happy with the chocolate cakes. i expected them to be fluffier and softer, but they turned out a tad hard for sponge cakes... i must have done something wrong >__<

i used this super simple recipe for the cakes, and whipped up the frosting using my own formula. haha. lucky me it turned out good :')


chocolate cake (recipe adapted from my sweet tooth)
  • 110g butter
  • 110g sugar
  • 3 eggs
  • 110g self raising flour
  • 1 tbsp cocoa powder
  • 600ml thickened cream
  • 1 tbsp cocoa powder
  • 1 1/2 cup icing sugar
  • strawberry jam (to spread on a layer of cake)
  • extra cocoa powder (to add to frosting for deco)

how to
chocolate cake (recipe adapted from my sweet tooth)
  • beat butter and sugar until fluffy. add eggs into the mixture one at a time, beating well after each addition.
  • sift self raising flour and cocoa powder into the batter.
  • beat for 2-3 more minutes until batter is well combined.
  • pour batter into two well-greased baking trays.
  • bake in preheated oven at 170 C for 25-30 minutes or until a skewer inserted into the middle of the cakes comes out clean.
  • leave cake to cool on a cooling rack.
  • sift cocoa powder and icing sugar into thickened cream.
  • beat until stiff peaks form.

  • when cakes have cooled to room temperature, spread a layer of strawberry jam onto the surface of one cake. top jam layer with a layer of frosting.
  • sandwich frosting with another cake.

  • you can add more cocoa powder into the extra frosting to add more contrast to the colour, and pipe it onto the cake like what i did. then add some fruits to the cake, to make it look pretty!

aaanddd now that i have another look at the chocolate cake recipe, i noticed that i only used 2 eggs, instead of 3!!! no wonder the cake didn't turn out really well. that aside, i guess the cake should've been really nicee! and the recipe is really simple too! yayysss!

I usually add some milk (fresh milk or chocolate milk) into my chocolate cakes. It's fluffy and moist!
